Poppi started with a simple idea and a home recipe. Co-founder Allison Ellsworth began testing early versions of her prebiotic soda at farmers markets across Texas, where she saw immediate consumer excitement. That grassroots momentum led to a national spotlight when she pitched the brand on Shark Tank, securing investment and validation. From there, Poppi officially launched in 2020 and quickly evolved from a local upstart into a disruptive force in the beverage industry—one that’s redefining what soda can be for a new generation.
Why Austin?
Co-founder and Chief Brand Officer Allison Ellsworth always knew Texas would be home, but Austin’s energy, community, and talent pool made it the clear choice for Poppi’s headquarters. “Texans get behind Texan brands,” Ellsworth shared, and Austin’s culture of creativity and connectivity sealed the deal. The region offered a hub for recruiting top-tier talent—especially in CPG—and an unmatched vibe that resonated with the brand’s bright, bold identity.

Since establishing its headquarters in Austin, Poppi has grown its footprint from 3,500 to over 12,000 square feet. The expanded HQ includes new creative spaces like a podcast studio and collaborative areas to strengthen in-person culture. In just a few short years, the company has cultivated a high-energy team made up of both local talent and passionate employees who relocated from hubs like New York, Los Angeles, and Miami to be part of the Poppi mission.
In March 2025, Poppi achieved a significant milestone when they PepsiCo announced its acquisition of the company for $1.95 billion, marking one of the largest exits in consumer packaged goods (CPG) history. This acquisition underscores Poppi’s rapid ascent in the functional beverage market and highlights Austin’s role as a nurturing ground for innovative, health-conscious brands
